释义	雁膳 yàn shàn亦作鴈膳。菰米的别称。《管子·地员》﹕其种雁膳黑实﹐朱跗黄实。郭沫若等集校﹕杨慎云﹕菇﹐《管子》谓之雁膳﹐以雁食之也。一说﹐即青稞。张佩纶曰﹕《说文》'稞﹐谷之善者﹐一曰无皮谷'﹐《周礼·膳夫》'膳之言善'﹐膳、善通。《四民月令》'青稞麦与大麦同■冱■﹐麺美﹐磨尽无麸'﹐此即《说文》所谓无皮稞为谷之善者﹐且与大麦同﹐与雁味相宜﹐故名之曰'雁膳'。
