著名川菜。為涼菜。製法:雞煮熟去骨,用棒將雞肉敲鬆,扯成絲,淋以麻醬、醋、糖、醬油、紅油、蔥花等調成的佐料。由於雞肉被棒敲鬆了,調味易於滲入,酸甜香辣,甚為可口。
